Salmon with Pesto and Orzo
Salmon with Pesto and Orzo recipe for a delicious seafood pasta meal. Originally published in 2015, we recently made this recipe again, paired with a crisp white wine from Campania, which we share for today’s Italian Food, Wine and Travel visit to the region.
Ingredients:
For the pesto and orzo
2 cups fresh basil leaves, rinsed and tightly packed
4 cloves garlic
¾ cup extra virgin olive oil
¾ cup Pecorino or Parmesan cheese
2 tbsp pine nuts or toasted pumpkin seeds, to make the dish nut free
12 ozs orzo
1 14.5 oz can chickpeas or white beans, drained and rinsed, optional
For the salmon
12 ozs wild salmon fillet, rinsed and patted dry
1 tbsp extra virgin olive oil
dash of salt
